Chef : 1 restaurant Alongside his younger brother Patrice, Xabi Ibarboure has successfully succeeded his parents at the head of the family restaurant."Les Frères Ibarboure": more than just a name, it's a story, and the promise of wonderful moments of celebration and indulgence. First there was Jean-Philippe (known to all as Philippe) and his brother Martin, who succeeded their parents and opened their restaurant in Bidart. By the mid-1980s, the Table des Frères Ibarboure was rapidly making a name for itself in the Basque Country.

In 2008, the two brothers parted company on good terms, Philippe remaining at the helm of the Bidart restaurant with his eldest son Xabi (trained by the Pourcel brothers and Jean-Michel Lorain) at his side.res Pourcel and Jean-Michel Lorain), joined a few years later by younger son Patrice, one of the best pastry chefs of his generation, and winner of the MOF title in 2019.
In 2013, he brilliantly succeeded his father at the helm of the Table des Frères Ibarboure .
At the helm of the establishment since 2013, with their wives and, in the background but always present, their parents, the two brothers form a powerful and efficient core, and are perfectly complementary. Xabi, the chef, and Patrice, the pastry chef, are perfectionists, and their partnership today produces one of the most exciting cuisines in Nouvelle-Aquitaine, and beyond. The 4 toques, awarded in our 2022 edition, were long-awaited and reward, beyond the plates, a true house of happiness.
