Gault&Millau's review 2025

Lovers of Basque cuisine (and there are many) swear by this fine address, owned by a famous family of hotel restaurateurs who take turns at the stove from father to son, with Xabi now in charge of the savoury side while his brother Patrice delights all sweet tooths. To give guests the pleasure of extending their stay, they have also fitted out a 17th-century residence with 13 warm and cosy rooms, decorated with furniture by local craftsmen. The establishment also boasts a beautiful swimming pool and, since May 2022, sauna and Nordic bath cabins near the herb garden, in the heart of a 2-hectare estate on the edge of the forest. All this just a few kilometers from Biarritz and Saint-Jean-de-Luz.
