"I'm not a cook, he's not a pastry chef. That's why we get on so well!" That's how Patrice Ibarboure sums up the perfect harmony that reigns between him and his brother Xabi in the family inn, which has been rated 4 toques for the past three years. This line of shared responsibility is followed in a spirit of mutual understanding, enhanced by the natural bonds of siblingship. "We work in total confidence, each in his own part. I can give my opinion, suggest areas for improvement, just as Xabi can do on the sweet side, without interfering.The ultimate goal for both of us is for the result to be good and for the customer to be happy. "

A brotherhood in the service of gastronomy

The two brothers are children of the ball, who didn't need to change their name (Les Frères Ibarboure, now La Table des Frères Ibarboure), since it was already the name of their father and uncle. "Theassociation got off to a very early start, as we sometimes helped out our parents when we were teenagers," says Patrice Ibarboure. After school, however, everyone went their own way. Patrice went to Paris to complete his pastry training at Fauchon's boutique, before moving on to the big houses: Pierre Gagnaire on rue Balzac for four years, a year at the Crillon with Christopher Hache, two years with Daniel Boulud in New York .

But his first position as pastry chef came when he returned home to his brother in 2013. "Everyone had left, there was everything to do.With Xabi, we rolled up our sleeves, telling ourselves that we were lucky to have a great tool." The house was down to 2 toques, the third is coming back in 2015, the fourth in 2022, which had never happened in the parents' time...
