Chef's Restaurant Romain Goyeneche has successfully completed his first year at the helm of his restaurant, offering a cuisine as elegant, well-crafted and renewed as ever. He plays with the region's produce with great skill, without distorting it and always reserving a note of surprise: freshness and flavor with this millefeuille-like starter of green and yellow zucchini, with grey shrimp jus, green jelly and fennel, beautifully cooked line-caught pike-perch from the Saint-Jean fish market, accompanied by nectarine jelly and caramelized onion, gourmet construction on Kintoa pork loin, morello cherry gel, cherry stuffed with date, zaatar, oregano, charcoal-smoked eggplant, red shiso leaf, goosefoot and meat jus, before a pleasant dessert of red fruit, ribot milk and white chocolate crumble. The service was dynamic and dedicated, but the evening lacked a sommelier to liven up the cellar, which was very eclectic, boasting the region and the South-West, but also taking in Spain, Italy, Hungary...
