Remarkable Restaurant Cédric Béchade's offer, his overall service and, of course, his cuisine, are all top-notch, providing security and elegance. A regular at the top establishments, he has given this very chic Basque inn its letters of nobility, without risking adventurism and pleasing a large and demanding clientele. Whether on the terrace or in the dining room overlooking the Pyrenees, the view is splendid and the food completes the pleasure of the senses: beautiful version of marmitako, with ventrèche, sweet pepper tomato and potato, and tuna loin with sherry vinegar, Ibaïama pig roasted with wild flowers, an ingenious marriage between eggplant and rhubarb or a beautiful marriage of texture in the cocoa tuile topped with an iced stracciatella, Valrhona Itakuja chocolate ganache, ganache montée, pine cone powder, passion resin and matcha tea and laurel needles. A professional welcome with no false notes from a well-honed team, which on the other occasion lacked a real sommelier, to take advantage of the extensive cellar of 450 references, to be studied on a tablet, focusing on the region and beautiful labels.
