Boldness and flavor define this “culinary journey,” available in two versions—vegetarian or flexitarian—centered on the ingredients themselves and prepared with technical precision: line-caught bluefin tuna with hints of purple, monkfish loin in ttoro sauce, fermented lemon, and roasted Herriko beef chuck in this €158 tasting menu that offers a double choice at each course, concluding this year with rhubarb or tomato.
