Fabrice Idiart welcomes guests to a setting just like his, a beautiful, discreet house, hidden in greenery and open to nature. The chef delivers his finely sourced products, with a fine aromatic palette of contemporary vegetables. For example, the suggestion of eggplant and black garlic, or the broths or juices that accompany langoustine or octopus. Special mention should be made of this axoa, which is made without veal, yet is at the heart of tradition. This ancient and well-known terroir offers us a beautiful voyage that rings true with frank gourmandise. The cellar is in the same vein, committed to making fine discoveries. At the end of 2025, Fabrice Idiart announced that he was switching to an entirely vegan cuisine.
