Remarkable Restaurant Fabrice Idiart is one of those chefs who can astonish you with a carrot or a potato. In this peaceful, almost timeless setting, the stroll is a delightful interlude, rediscovering a terroir we thought we knew so well, plunging into a world of unexpected flavors, from the varied appetizers to the final kombucha declension. Well-crafted compositions with obvious combinations of vegetables, seafood and meat: zucchini and Landes duck, maigre au naturel, dried bottarga, a bite in the spirit of a seaweed tabbouleh, steamed turbot, spirulina and tobiko sauce, celery and sweetbreads in four bluffing plates before a beautiful chocolate, coffee, sourdough, soy dessert... Three toques in progress for as much accuracy and pleasure, led by a fine, involved and active team. In keeping with the chef's philosophy, the cellar is also committed, favoring local, virtuous winemakers who respect the soil and the vines. Discoveries everywhere, and a good choice of wines by the glass.
