This restaurant on the corner of rue de la Tour and rue Mignard was for ages occupied by Tang, the legendary Chinese restaurant where stars once had their napkin rings. That page has now been turned, and Camille Saint-M'Leux, known from Villa 9Trois in Montreuil, has taken over the doorstep to open his first restaurant, Geoélia (a sign in the shape of a nod to the christening name of the sailboat owned by his grandparents, Georges and Eliane). The room is magnificent, with its high ceilings and meticulous decoration, and the chef's ambitions are obvious, with a first menu priced at 125 euros. The products are beautiful, the technique is sure, and three toques immediately reward a cuisine full of spirit and personality, based on very fine products (a magnificent yellow pollack, watercress and cucumber, a perfectly gourmet chuck of Jersiais beef with cuttlefish lard and a lovely reduction, a reassuring fontainebleau with strawberry ciflorette and vanilla arlette) and already accomplished. We appreciate the service, in the right tone, and smile at the coffee ceremony, for which the staff have been trained by Terre de Café (the customer chooses from among three different varieties of beans, which will be ground by hand in front of him, before the coffee is passed through according to a very precise timing and quantity of water determined for each variety). A fine cellar, but one that deserves to be expanded in terms of by-the-glass offerings.
