Nourished by a wealth of experience in the Caribbean, chef Xavier Pistol has created a sunny, exotic cuisine for the Renaissance**** hotel, between Trocadéro and Victor Hugo, which enhances French products with spices and ideas from elsewhere. The menu is a fine example of personal gastronomy, with roasted sots-l'y laissent, corn and maracuja, a sweet potato flan, summer vegetable and pepper-safran emulsion, a filet of lean meat, parsnip and spinach, or a chicken supreme, coco colombo, crispy risotto and baby carrots.
