Chef's Restaurant A couple in perfect complicity, working together to achieve a new and personal gastronomic experience. Having worked at Pickles in Nantes and at the tables of Courchevel, Thibault Le Goff knows both rigor and creativity. In the dining room, Marion Pelletan's experience at Les Sources de Caudalie in Martillac is both professional and human. The evening menu delivers on its promise, with grilled octopus, burnt cucumber, ricotta, shiso and sesame, confit saint-pierre, raw roasted broccoli and purée, grilled pak choï cabbage and passion fruit, duck breast and broad bean purée, glazed turnip and pickles, orange segment and full-bodied orange juice, beet and apple dessert. Mainly organic cellar.
