Chef's Restaurant A pretty Breton longère in the quiet Quimper countryside, a cosy dining room with thick sails and little view of the surrounding pavilions. The decor is set to follow the codes of traditional restaurants, those that are well-mannered and well-behaved, with a hushed ambience, background music and service applied at the slow pace of a "gastronomic restaurant". The langoustines, with their excellent mother-of-pearl bisque, could have done without the slightly thick agnolotti with its bland stuffing; the noble fish was the saint-pierre, remarkably fresh and very well cooked right to the bone, the accompaniment once again lacking (except for the very good boule d'or turnips) with its unnatural truffle aroma. The chocolate manjari dessert is very good, powerful and of high quality, with the very good idea of the blackcurrant coulis, and allows us to keep two beautiful toques. Good references from the thick cellar book.
