On the second floor of a centuries-old house set against the backdrop of Saint-Corentin cathedral, the table immediately announces this ambitious and imposing blend of modernity and history, immediately made clear by the clean lines contrasting with the heavy, polished stone of the old walls. Thibault Monnerie and Camille Favain have taken the place by storm, putting a fresh spin on local cuisine, blending culture and terroir, tradition and creativity. In the chef's cooking, you can see the inspirations and established links, resulting in hake ceviche, lemon confit and balsamic, chicken and Chinese cabbage stew, caper foam, prune far and glazed dark chocolate ganache, limoncello granita and white chocolate cream.
