Chef's Restaurant Impossible to miss this imposing 1920s building in the heart of the Monts du Lyonnais, remarkable for its Italian Renaissance architecture. The house is opulent and lends itself perfectly to the hotel-restaurant business. To keep the kitchens running, chef Sylvain Roux revisits local produce in an updated vein, for example, royal sea bream and peas in ceviche, lemon yuzu, Cévennes Arctic char mimosa style, fried capers, fennel risotto and bud sabayon, or pigeon cooked on the trunk and lacquered Pekinese-style, pastilla of thighs, puffed amaranth, carrot and broccolini declension, and finally a dessert of raspberries, verbena and meadowsweet. Menu €87 or €110.
