The long history of Le Clos Normand is therefore not over, and all Normans are delighted with its resurrection. Thanks to the new owner, Sophie Bedu, who for the past three years has been working to restore the appropriate lustre to this superb rustic residence in the village ten minutes from Dieppe. The cuisine, too, has returned to the colors of tradition, with an extensive seasonal menu to satisfy old faithfuls: foie gras and duck marinated in Timut pepper, puff pastry of white pudding with Riesling, turbot filet with rosemary, veal kidneys in mustard sauce, Grand Marnier soufflé.
