Gourmet Restaurant Here's a duo that has given new life to the former Tire Bouchon. Thibault Martel and Baptiste Rivière have been accomplices since their days together at Christian Têtedoie. Since then, they've traveled a lot, and collected a lot of memories, which they share with us here. An obvious sincerity and a desire to take us with them, in their suitcases. A crossbreeding of materials and products, and a constant focus on the marriage of land and sea. We'll remember the barbecued abalone, the chorizo octopus and spelt risotto, but not so much the tartare, which seemed a little lacklustre. The desserts are amusing, with a trio of buckwheat, honey and Greek yoghurt, as is the unexpected meeting of grapefruit and hibiscus. The wine list is central to this experience, and it's possible to have fun at a fair price, but the menu is a little dizzying. From Austria to Roussillon, from neighboring Savoy to Spain and Hungary. But don't panic, the service may be young, but it's very professional: listen to their advice, and they'll be able to point you in the right direction at this "canaille food" establishment in the heart of Lyon's Rue Saint-Jean.
