Gault&Millau's review 2026

Located in the 5* Villa Florentine hotel, the restaurant boasts one of the finest views in Lyon, overlooking the city from the Fourvière hill. The large panoramic windows ensure an unobstructed view of the surrounding area, while Henri Carlier and David Delsart develop a cuisine of great height, combining noble products and proven technique. The menu is sure to please both fans of Lyonnais cuisine and a more international clientele, with dishes such as ravioles à la rigotte de Condrieu, pine nuts and fermented honey, and œuf parfait, langoustine tartare and osciètre caviar, sea bass quenelle, celery risotto and sorrel cream, farm squab pan-fried in Bresse butter, confit legs and burnt shallots, a dessert of Valrhona Ghana dark chocolate, cloud of smoked hay and Espelette pepper. Well-stocked cellar with Rhone and Burgundy wines.
