Chef's Restaurant You can tell a restaurant run by a Japanese chef in Paris by the fact that there's no sign of it, in the hope that mystery is a guarantee of quality. And the experience proves it, giving Tetsuya Yoshida the opportunity to sharpen his knives and show off his talent: trout marinated in citrus fruit, green asparagus and homemade curd, roasted Duroc rack of pork, turnips and roasted treviso, sage prune condiment, soft vanilla cookie with combawa leaf ice cream, raspberry and lychee confit, fresh raspberries and ribot milk emulsion, a delicate sequence that easily confirms the second toque.
