Gault&Millau's review 2025

Set on the Place de la Concorde, this palace is a piece of the capital's history, since the building was built on the orders of Louis XV before becoming the property of the Crillon family, and then being transformed into a hotel in 1909. Now part of the Hong Kong-based Rosewood group, this legendary address was given a new lease of life in 2017 after four years of restoration under the leadership of Aline Asmar d'Amman and interior designers (including Tristan Auer and Chahan Minassian). The original decor has been preserved in the Jardin d'Hiver and the Bar Les Ambassadeurs, only warmed up with a few contemporary touches. The 78 rooms and 46 suites, a clever blend of historical spirit and tempered modernity, exude a luxurious elegance, as does the Sisley spa with its large swimming pool, or the gourmet restaurant L'Écrin, led by Boris Campanella. A must-see, unless you'd prefer to try the Jardin d'Hiver with pastries by Matthieu Carlin, the Nonos & Comestibles delights designed in collaboration with Paul Pairet, or the ice-cream cookie shack, perfect for the height of summer.
