High level is a matter of course, and unlike taste and color, there's no arguing about it. Just step into the dining room: the spaced tables, the numerous staff, the dedication and commitment of all involved in the success of the project: this is what it's all about under the direction of MOF captain Franck Putelat. The multi-award-winning chef, a brilliant competitor, knows all the aspects of haute gastronomy, but also its constraints: in Carcassonne, tourism only exists in large numbers inside the ramparts, just above the Park. And all year round, you have to cajole those who are there, and motivate your staff. The chef has come up with a brilliant initiative: the back of the menu lists all the restaurant's staff, right down to the dishwashers, with their names and functions. It's a powerful gesture that also convinces the twenty guests of the attentions paid to them by the twenty people who are mobilized to make this moment happen. So, yes, four toques for all that, and of course for the dishes, well divided into three menus, and all available à la carte. Products and ideas, sturgeon brandade with shrimp and seaweed, Mediterranean galley aspic and caviar with cabbage texture, fresh and distinguished, pike-perch from the river brought to him by his fisherman in Grau du Roi, sea almond au naturel with carrot juice and ginger for a fine exercise in style with a royal fish, sweetbreads "crousti-fondant", and the very fine work of the inspired pastry chef, whose dessert version of gin fizz, "Gin to" citrus juniper and mozza des Corbières, we loved, as well as his inventiveness with leek vinaigrette, and the texture of rhubarb in a surprisingly tart dessert. An imposing cellar, in two volumes, one focusing on Occitanie, with all the stars, the other surveying the other regions with recognized references.
