Prestige Restaurant With Gilles Goujon close by, and the Pourcel family not far behind, Franck Putelat is the other boss of the Languedoc region, the one who is listened to and followed, the great professional who can be entrusted with a brasserie, a bistro or a gastro because he has the knowledge, the teams and the sense of management. At home, however, in this beautiful, solid house at the foot of the citadel, he remains first and foremost a chef, who knows how to draw up enticing menus and string them together with as much imagination as technique: bijus (violets) with smoked ratte in a parmentier style, salicorne, cockles and osciètre caviar, razor clams and asparagus in a delicate mousseline, the conviviality of an oursinade in his own way, with bacon from Colonnata, yoghurt and grapefruit for extra acidity, the comforting cassoulet, lightened and polished with a supreme of pigeon à l'étouffée with leg sausage, roasted beans, red tuna and broth, an inspired dish that's a real gourmet delight, before the cheeses and doughnuts of a very fine walk at €175 and five sequences punctuated with attention. The service is in keeping with the restaurant's high standards, and the cellar is well-informed and well-advised, with a wealth of information on all the Languedoc vineyards, especially Corbières.
