This is one of Carcassonne's most emblematic houses, a Relais & Châteaux estate set around its superb period chartreuse, park and golf course, embodying a certain idea of southern luxury. The Bernard Rigaudis table has been proudly run by Philippe Deschamps for fifteen years now, perpetuating the art and the manner, the taste for good food and the sense of rigor. The €78 menu offers excellent value for money, with foie gras de canard mi-cuit, melon bonbons infused with vanilla citrus and balsamic reduction, filet de rouget cooked à l'unilatérale, crushed Lucques potatoes, sauce vierge and crunchy samphire, pan-fried beef fillet, zucchini and southern vegetables, grated summer truffle and jus court, not forgetting the unmissable cassoulet Dieu le fils. Market menu €65.
