Remarkable Restaurant Not far from Mazamet, Anne and Thomas Cabrol have taken the concept of a country estate to its logical conclusion, offering a true walk in the heart of the Causse. As much a table of wine as a table of dishes, the oeno-gastronomic experience reveals the large in the small, unveiling in a small local area a wealth of products and possibilities. In twelve courses, like beacons, the menu tours the country with intelligence and knowledge, graphic compositions centered on the product and crafted with undeniable mastery. We're introduced to the pleasures of wild harvesting, the merits of wild licorice and the gourmet delights of Causses truffles. Then there's the chef's inspiration, with river fish, meat flambadou, a presentation of valley cheeses, and finally the desserts, in a beautiful declension. A superb wine cellar with over a thousand references, which is logically matched throughout the menu.
