At the foot of the Montagne Noire, around the 14-seat counter, and with just three services a week, Anne and Thomas Cabrol have built up a strong reputation with a bobo-urban clientele. Their oeno-gastronomic promise of foraging plant-based cuisine and pairing food and wine from the thousand or so references in the cellar is more than fulfilled. All guests are served at the same time, as in a table d'hôte, and each dish is explained by Thomas, who is in charge of the cooking. As for the wines, they are described by Anne, well beyond the label. The concept, like speed dating, makes it possible to find new friends for those who lack them, while letting yourself be carried away by the twelve courses, from the carrot tartlet, through the white asparagus to be used as a mouillette in a velvet with five Tarn truffles and compote of matured Lautrec pink garlic, to the trout endormie à la benoite, tender and perfectly cooked where the sweet and sour condiment with fragrant myrrh prolongs the taste. The show continues with pigeon au flambadou, where smoky notes meld with the blue berry carcass sauce. For dessert, the sugar-free ganache with roasted beech fir praline is presented under a painted bell in homage to the Pic de Nore.
