Gault&Millau's review 2025

This beautiful address will appeal to all lovers of nature and history, set on the ancient oppidum of Carsac, the exact spot where the city of Carcassonne was born. Built in the 19th century on the ruins of a Carolingian abbey, the residence has been owned for three generations by the Rigaudis family, who jealously preserve all its charms... A sumptuous park whose tall trees are a bird's paradise, an 18-hole golf course, a tennis court and a swimming pool, not to mention the 19 rooms, suites and apartments, decorated in a chic country style with exposed beams and flowery fabrics. Another highlight is the hotel's top-flight catering, featuring regional recipes from the Bistrot d'Auriac and the Bernard Rigaudis gourmet table, led by chef Philippe Deschamps, to be enjoyed in the Empire dining room or, as soon as the weather warms up, on the terraces overlooking the golf course and gardens. A not-to-be-missed member of the Relais & Châteaux group.
