When the forest is burning, when everything around you is falling apart, you need a courageous captain. One who motivates everyone, rallies his teams, and rolls up his sleeves with them. It takes a man like Gilles Goujon, who, after the whole region around his village went up in smoke, called with all his might for a general mobilization to save the Corbières. This man, apart from his tunic with five toques, his MOF collar and his various crowns, deserves respect and even admiration. Today, he's giving us even more reasons to come back to Fontjoncouse, to find a close-knit family and a unique, majestic cuisine brimming with generosity. In the large, elegant dining room, where each table is the focus of a team's attention, and even a special light, we'll be delighted to rediscover the Carrus egg "rotten" with truffles, the marvellous declination of lamb with its mushroom blanquette and the trompe-l'oeil lemon de menton. Above all, we'll find a fabulous house, where service is as personalized as it is distinguished around the mischievous Vincent Labarsouque, who knows better than anyone how to embody the spirit of the place and comment on the chef's dishes. As with Delacroix, liberty guides the people at Fontjoncouse. Do you like fish? Grau du Roi's fishing fleet is at your service. Do you like meat, vegetables or game? Gilles Goujon is a specialist in everything, and we have some memorable memories, last autumn, of some wild ducks that had done well to fly over the area. Today, with his sons, Axel and Enzo, around him, he knows that the phoenix will always be reborn and that the sun will always rise over Fontjoncouse. One is already a highly accomplished cook, able to deputise for his father and take the wheel, the other is already one of the best pastry chefs in the country, while Marie-Christine Goujon ensures the smooth running of the business and the well-being of every member of the family. For an introduction to this fabulous moment, the "Quelques pas dans la garrigue" menu is a magnificent experience, with egg, of course, Occitan bourride, lamb, the incredible cart of cheeses from the region, and the crystalline rhubarb strawberry and raspberry coulis hibiscus. The wine list is also a monument, and the head sommelier is sure to recommend the Corbières vineyards..
