Prestige Restaurant Some years, not so long ago, we'd come to Lionel Giraud's house with a hint of apprehension, if not reserve. His enthusiasm and panache, but also his risk-taking, might have made us fear a few jolts. Today, the investigators are fighting to visit him, and the serenity of the announced good time is total. Once again, moreover, the 4 toques have raised no doubts: elegant house, fine team, superb execution and respect for the environment, with a long and patient loyalty to dealing directly with producers, whom the chef has the good taste to mention. A lot of pleasure, then, with the vegetable creations of the moment, girolles du Canigou, creamy fresh almonds and agastache, green asparagus, vintage plum 2022, barley miso, before plates full of sensitivity, with a delicate touch, farmhouse hen's egg with petits paris, wild polypode pulp, ikejime red tuna au naturel, head broth in vinaigrette, three-week matured bass from the Gulf of Lion, citron, fermented sunflower, all of which demonstrate a beneficial knowledge of fish and precision. The magic tricks are always numerous, lobster with socarrat rice (paella style), beef in three ways (carpaccio, raviole, confit) with a variety of condiments, cocoa, rhubarb, tarragon... Desserts are equally brilliant (noix franquette in soft cookie, creamy cockles with raw milk, macaroon with Canigou fir syrup), the predominantly female staff provide competence with gentleness and simplicity, and the cellar remains an ode to the wines of Languedoc and Roussillon, served by an expert young sommelier, Laurie Briffa.
