Set on a vineyard estate, this prestigious complex overlooks the vineyards and the surrounding region. At the heart of this complex, which offers a first-class vacation experience, lies the gourmet restaurant led by Valère Diochet, a dedicated and inspired chef who was named “Grand de Demain” in Alsace and has seamlessly adapted to the Languedoc region. In this inspiring setting, he skillfully combines Mediterranean ingredients with the finest local produce: Mediterranean tuna, marinated ventrèche, stuffed zucchini blossoms with a sauce made from Taggiasca olives, red mullet and thin homemade pasta with squid ink, seasoned with red mullet juice, roasted and glazed duck, a pissalat of spring onions with turmeric, apricots candied in brown sugar, pistachios, hazelnuts, and kefir ice cream—all part of a very appealing set menu priced at 85 €. The chef always makes it a point of honor to offer an unbeatable value for money. The restaurant’s own vineyards help enhance a wine cellar that boasts a rich selection from throughout the region and extends well beyond it.
