Remarkable Restaurant A mature table on this magnificent 4* wine estate and hotel just outside Narbonne, where luxury rubs shoulders with inspiring nature. Valère Diochet is proving his talents with a well-constructed experience, today serving a solid plate well founded on local produce. The €80 Expression menu is fair and balanced, with gravlax-style denti, pencil leeks, granny and field flowers; Mediterranean red mullet, sunflower seed focaccia, tagette and red mullet jus; lacquered duck breast, beet and condiments; lacquered plum, pistachio mousseline and plum sorbet; or fresh figs, arlette, coffee cream and hazelnut praline ice cream. Very fine cellar, with estate wines and fine labels, well commented by the sommelier.
