Chef's Restaurant It's a real pleasure to be back at this fine table on the banks of the Garonne, led by Michel Dussau, an emblematic figure in the town. The table is a meeting place for all occasions, where one comes with the assurance of a moment of conviviality and pleasure. The chef cultivates a cuisine d'auteur and de terroir full of color and intensity, with a sincere expression, on a declination of langoustines, tartare snacked with oysters and lime, consommé glacé with lemongrass perfume, fennel confit, olive tapenade and shimonita onions, or wood-grilled pigeon en crapaudine, French pea mousseline, braised summer vegetables and carcass jus. Signature dishes include pan-fried Garonne eels and black truffle brouillade.
