Chef's Restaurant We were delighted to see Michel Dussau back in top form. After an uncharacteristic, albeit excusable hiatus, this lover and champion of the terroir that he knows so well how to sublimate and which he constantly travels, always in search of the product in all its excellence, has bounced back to enchant us once again with the latest scallops in ravioli, organic shiitake, coriander shoots and ginger beef broth - a fresh starter, full of flavor, with discreet sprigs of coriander combined with ginger. A pavé de saint-pierre rôti au beurre demi-sel, fenouil bio du pays mijoté aux agrumes des Landes, jus d'une bouillabaisse à l'huile d'olive, pousses de fenouil, offers remarkable cooking, as does the trilogie d'agneau - agneau fermier du Quercy, légumes du printemps al dente, ail des ours, quelques feuilles de cresson, jus de carcasses servi à table - a dish as beautiful as it is generous. We end on a sweet note with pavlova, raspberries, lemon sorbet, on a bed of gariguettes. The rather eclectic cellar is on display, from around €30 to €400.
