Remarkable Restaurant Every year, Agathe and Benjamin Toursel seem to blossom more and more in their little village paradise. An inn between sky and plain, a pretty terrace in the garden under the pawlonias, a pretty room with a rustic spirit and the know-how of this complicit couple who have been delighting their guests for twenty years. The chef never complains: he forges ahead, comes up with new ideas, builds trust with his suppliers and, without seeming to do so, offers well-thought-out and accomplished dishes: the crisp freshness of asparagus with its fir scent, the magic of fresh peas with rhubarb and elderflower in a delicate, just-right pod broth, the precise work on bitters, with artichoke leaves in tempura, gentian and licorice in a Campari raspberry sauce. The cooking is clean, with a preference for steam to retain all the flavor, with cod ail des ours, a small ragout of cock's crest in the leaf, a rail of vegetable chili and squid ink for a modern, aesthetic and surprising dish. The low-temperature poultry shows further inspiration, with a carrot and nasturtium reduction on concentrated watercress, a crispy skin sandwich with herbs and nasturtium flowers, and trout roe jus gras... Finally, the chef has enlisted the services of an excellent pastry chef, Anthony Raymond, formerly with Tom Meyer, who impressed us with his shiso rooïbos framboise asperges glace huile d'olive before a remarkable composition of strawberry cucumber tarragon and strawberry pickles with mustard crème anglaise. Agathe's empathetic welcome and supervision, faultless service, kind and present, a large, rather specialized cellar in all regions, well served throughout the department (Marmandais, Duras...) and beyond throughout the South-West.
