For a quarter-century, Frédéric Fabre has been weaving his valiant, classic cuisine into a varied menu, representative of a professional, risk-free style: foie gras mi-cuit with pear and prune marmalade, monkfish cheek with curry, duck breast with fig caramel, Grand Marnier soufflé, all at fair prices.
