Chef's Restaurant Like French bistronomic cuisine with a Japanese twist, Takayuki and Claire Kamiya's cuisine is also metronomic, both in life and in front of their eternal ovens. Season after season, it's as precise as possible, even if we might regret a certain comfort zone that seems to delight the many fans of this seaside restaurant. The almost century-old maritime pine that runs across the ceiling is as majestic as ever, and remains a testament to this table that never fails. The three-, four- and six-step menus, starting at €45, offer an overview of the chef's savoir-faire, from the panna cotta of green asparagus from Mallemort with its lemongrass and combawa jus, to the very serious pâté de campagne with foie gras, the peach of the day flanked by a cream of white asparagus, Iberian pork in panko breadcrumbs with spring vegetables and Claire's desserts, with a rum baba without competition or a more subtle strawberry cup with green tea espuma and azuki paste. The wine cellar takes its cue from Provence without losing sight of the great regions, and sake is offered by the glass (or bottle) for the curious and the convinced alike. Service remains as reserved as ever.
