Chef's Restaurant The table of Louis Fargeton and Marie Garbiès is an integral celebration of craftsmanship, through the terroirs it highlights, and the technique in general it brings to bear. Everything about this workbench/workshop aims to draw the eye and reflection behind the scenes, starting with the names of things and people: meat from the Clavisy farm, knives from Jean-Loup Balitrand and ceramics from Laurence Fontaine; all are both materials and accessories for an inventive, well-crafted cuisine. The seven-course menu has a pronounced taste, with a starter of halibut, cabbage and saffron, partridge, pumpkin and potatoes, hare à la royale, corn and chocolate, and a dessert of beet, chocolate and blueberry.
