Chef's Restaurant In just a few years, Louis Fargeton and Marie Garbiès have put their Établi on the map of Lyon's most sought-after restaurants. The decor, deceptively haphazard but in fact very well thought-out, somewhere between a local rade and a trendy bistro, has rapidly attracted a clientele delighted to come and enjoy themselves in such good company, whether it's the cutler Jean-Loup Balitrand, the meats from Table de Solange or the spices from Saveurs du Cachemire. For good measure, the kitchen has opted for a contemporary, gently subversive repertoire, pairing veal with mussels, surprising the city dweller with the little-known frizzy sparassis associated with the peach of the day (a lovely, well-worked dish with raspberry vinegar to awaken the ensemble) before cajoling some with golden apple and vanilla rice pudding and jostling others with a clove, dark chocolate and blueberry coupling. Service in the right tone, between closeness and detachment, and a cellar that's obviously into nature.
