Chef : 1 restaurant A disciple of Christian Têtedoie, Louis Fargeton cooks like a craftsman, with the greatest respect for the product, at L'Établi, his 2-toque restaurant in Lyon."My sweet tooth naturally led me to study cooking," says Louis Fargeton, who graduated from Lyon's Lycée François Rabelais with a BEP in 2002, followed by a BTH from Grenoble's Lycée Lesdiguières in 2006. He completed internships at La Terrasse Christian Morisset in Juan-les-Pins and Alain Ducasse's Spoon restaurant in Saint-Tropez. In 2006, the young commis earned a place at La Rotonde du Casino Lyon Vert, working with Philippe Gauvreau.
In 2011, Christian Têtedoie tapped the 26-year-old to take charge of his Lyon establishments, appointing him executive chef. "An incredible opportunity! He pretty much gave me carte blanche to develop my culinary skills."
In 2016, Louis Fargeton wanted to take a breather before setting up on his own. He took off on a round-the-world trip with his partner, Marie Garbiès, to gain the necessary perspective. On their return, they opened L'Établi in Lyon in 2017: he at the piano, she in the dining room! "I cook products in the same way as craftsmen who work wood to make furniture, with the greatest respect for the raw material, but I don't forbid myself anything. The framework of my gastronomy is French, but I add touches inspired by my travels around the world." Gault&Millau immediately awarded him 2 toques.
