Chef's Restaurant This is the flagship of the Thomas Ponson fleet, identifiable by its beautiful red façade, which sets it apart from its two other establishments on the street, offering here fine gourmet dishes with its chef Mickaël Moly. The dishes are carefully composed, with the finest produce intelligently combined and prepared. On the autumn menu, for €49, grilled Saint-Malo scallops, Jerusalem artichoke, coffee and citrus sabayon, grilled hake back à la plancha, roasted parsnips, aniseed mussel juice emulsion, two-cooked royal hare, celery ball and kumquat, chestnut dessert and Caol Ila whisky declension. A little less enthusiasm this year for plates that are certainly well controlled, but also a little formatted. Regional cellar.
