Chef's Restaurant A new Franco-Nipponese restaurant led by chef Ken Yamamoto, whose eloquent CV explains his immediate success: Château Robuchon in Tokyo, Laurent Tarridec in Saint-Tropez, Passiflore with Roland Durand, at the Relais d'Auteuil with Patrick Pignol, Jean-Louis Nomicos.... Although the setting is modest but elegant, with 16 covers, and the restaurant offers just 2 menus, €55 for lunch and €95 for dinner, the cuisine is well worth a look. Starting with his signature dish, foie gras with saikyo miso, placed on a dashi daikon turnip, magnificent, then the stuffed poultry, shiméji and shi-také with cebette accompanied by a well-concentrated miso poultry jus and to finish the white chocolate terrine with Japanese matcha, rhubarb sorbet. Technique, refined creations with a strong taste, that's Ken's cuisine. A wine list that's sure to expand.
