The seasons guide the compositions, in a good first menu at €34, with heirloom tomato tartar with herbs and gambas, fishing return a la planxa, paella jus, mussels and mild chorizo, lamb shoulder cooked 24 hours with chanterelles, hazelnut picada and potato millefeuille.
