Chef Benoît Janet is in charge of the kitchens at this Relais & Châteaux, serving dishes that focus on nature and the strength of regional produce, favoring short circuits and respecting cycles. For €95, the perfect egg and Conflent asparagus, Canigou trout and Ostergruss radish, Mosset pigeon, beet and blackcurrant, mel i mato nuage and wild pollen... Professional service.
