This cuvée is the exceptional result of over 20 years' work to bring the soil back to life. Now presented in an opaque bottle, Clos des Futies is a rich, intense table champagne, with an enormous degree of drinkability and a fluidity that leaves us in awe. After delicate decanting, we appreciate its complexity, which ranges from the fruity (vine peach, baked apple, blood orange) to the vegetal (dried fruit, especially cashew, and olive oil). The very fine balance between fat, vinosity and minerality is an asset which, thanks to its great length and intense freshness, will be the perfect accompaniment to exotic dishes (Thailand and India), as it will stand up well to the spices, but also to roast turbot with yuzu butter and lemon thyme for a refined pairing.
