Gault&Millau's review
Owner-winemakers for eight generations in Bouzy, the historic heart of the Pinot Noir Grand Cru region, the Paillard family, now headed by brothers Antoine and Quentin, manages 11 hectares classified as Grand Cru, spread over 30 parcels, 60% Pinot Noir and 40% Chardonnay. The domaine takes great care in its production, respecting the soil (no pesticides are used), vinifying each parcel and ageing its champagnes for a long time - up to ten years in bottle for certain cuvées - to strengthen and refine their character. The wines are superb, and come in new, elegant, sober packaging.
