Winery presentation by Gault&Millau
Established in Bouzy two hundred years ago, Pierre Paillard has been run for the past seven years by Antoine and Quentin Paillard, brothers in the eighth generation. Their credo: converting the vineyard to organic farming, respecting the soil to obtain high ripeness, producing less but better, by combining long vinification times in wood. But they also combine substance, fruit, salinity and minerality to create wines with complex, delicate harmonies and long ageing potential. Precision and exacting standards are their watchwords. The house is made up of a historic 11-hectare vineyard, located entirely on the Bouzy Grand Cru terroir, but the two brothers have also opened up to the finest terroirs of the Reims mountains, namely Verzenay and Ludes. In 2023, they will launch the first vinifications of two cuvées from old vines.
