Winery presentation by Gault&Millau
Following in the footsteps of Benoit Paillard, it is now up to his sons, Antoine and Quentin, to take over the family estate founded more than 200 years ago in the village of Bouzy. Although they hadn’t originally planned to become winemakers, these Bouzillons have ultimately found their calling in the trade without stepping on each other’s toes. Antoine oversees production on 11 hectares, primarily on the southern slope of the Montagne de Reims, classified as Grand Cru. Quentin handles sales and business development. But for both of them, the winemaking process involves all the plots in Bouzy as well as a few in neighboring terroirs such as Ambonnay, Verzenay, Ludes, and Taissy, where they cultivate Pinot Meunier while the rest of the estate is planted with Chardonnay and Pinot Noir.
