This very lightly-dosed 2010 is beautifully homogeneous. Its intense, complex nose combines white-fleshed fruit, almond, mirabelle plum, apricot and licorice. The palate is vibrantly chewy and persistent, attesting to a well-mastered savoir-faire. The chalky finish is almost saline. A fine match for guinea fowl with braised cabbage.
