Behind this magnificent magnum lies the 1959 vintage of Cuvée des Enchanteleurs. This cuvée brings together the house's historic crus: Verzy, Verzenay and Mailly for the blacks, and Chouilly, Avize and Le Mesnil for the whites, in equal proportions. 1959 is stunningly fresh, from the moment its color begins to evolve. The nose opens with distinction and notes like essences, constantly evolving with each passing second. On the palate, the flavors are more intense and evolved than the aroma would suggest, but what depth! What length and final freshness on chalky bitters! Proof that slow evolution magnifies great champagnes. A soufflé with yellow wine for an original pairing.
