The nose is immediately remarkable for its complexity: cream, tobacco, dried fruit, as well as crème brûlée and white bread, all intermingle. The oxidized side is perfect, the rootiness balancing with the freshness of the fruit to a chiseled, saline finish. Superb. A perfect match with lobster.

Fleury
Located in Courteron, Aube, in the south of Champagne, this 15-hectare estate was founded in 1895 by Émile Fleury. Jean-Pierre Fleury, one of the first biodynamists on the Côte des Bar, helped expand the production system in 1989. Today, the 4th generation, Morgane, Jean-Sébastien and Benoît, are contributing to the estate. The estate has celebrated 35 years of biodynamic viticulture, and is now firmly established among the Champagne elite, producing expressive wines with a strong personality.
