Almost 10 years in the cellar for this magnificent 100% pinot noir corked champagne. The nose is immediately remarkable for its complexity: cream, tobacco, dried fruit, as well as crème brûlée and white bread, all intermingle. The oxidized side is perfect, the rootiness balancing with the freshness of the fruit to a chiseled, saline finish. Superb. A perfect match with lobster.
