Here's a superb rosé, deep and saline, from the "Matière" sub-plot of the Largillier cru. It's an audacious gamble, and a unique one at that: to create a rosé that's as full-bodied as you'd like, yet so airy, subtle and precise. The bubbles contained within the mass soar gracefully over a tonic acidity, with hints of burlat cherry, cooked strawberry, hibiscus and orange. Truly delicious! Enjoy with refined, gourmet dishes such as pigeon with foie gras and chioggia beet petals.
