A magnificent solera that expresses the patina of time while retaining freshness and distinction. The 4 sub-plots alternate over the years to give birth to this cuvée, where the bouquet recounts herbs (such as marjoram and laurel), orange and buckwheat. It's original and controlled, as the palate is built around a restrained, fine bubble, with a dense, flavorful texture. It is criss-crossed by a multi-faceted, sapid and deliciously fine acidity. A fine persistence to match with fleshy fish such as breaded red tuna with black sesame, sautéed in olive oil, young vegetable shoots and Cremona mustard.
