Gault&Millau's review 2025

Ideally located between Troyes, Dijon and Chablis, Château de Courban saw a new chef arrive in its kitchens this year: the talented Nicolas Thomas, Jeune Talent Gault&Millau 2018. But its many loyal guests are just as enthusiastic about the bucolic charm of this 19th-century estate, with its meadows, forests and former manor house that unfolds around 24 warm, refined rooms and suites... Not to mention the incredible 16th-century pigeon house where you can also spend the night. The outdoor swimming pool invites you to relax before exploring the park and its cascading gardens, ponds and beautiful terraces. The final attraction of this member of the Collectionneurs is the Nuxe spa, with sauna, hammam, jacuzzi and three treatment rooms offering relaxing or invigorating massages for body and face.
