What a cuvée! An aromatic explosion on the nose of candied fennel and gentian, with a smoky expression reminiscent of incense. Extremely complex, close to the fruit with its mirabelle plum flavors. The bubbles are precise, the liqueur sublime and the mouthfeel already superb. The only uncertainty is whether we should give this cuvée a few more months in the cellar, so that its fullness allows us to pair it with roast turbot with semi-salted butter, samphire and citrus sauce
