This champagne evolves with great finesse and complexity over the years. The greediness of this great vintage now fades, giving way to sensual notes of lemon cake, candied citrus and poached stone fruit. The palate is both precise and vinous. A superb cuvée, immortal and timeless.

To discover the origins of Billecart-Salmon champagnes, we have to go back to 1818, when husband and wife Nicolas François Billecart and Élisabeth Salmon founded their company. Alongside them, Louis Salmon, Élisabeth's brother and a passionate oenologist, has been involved in winemaking since the estate was founded. Since then, seven generations have succeeded one another in the village of Mareuil-sur-Aÿ, near Épernay, with Mathieu Roland-Billecart taking over the reins in 2019. Special mention for the blanc de noirs from the tiny Clos Saint-Hilaire (94 a), planted exclusively with pinot noir vines since 1964. These are now pampered by biodynamic viticulture and are once again open to the public after renovation work.
