Billecart-Salmon
In 1818, Nicolas François Billecart and his wife Élisabeth Salmon founded their champagne house. Working alongside them, Louis Salmon—Élisabeth’s brother and a passionate oenologist—was involved in the winemaking process from the very beginning. Since then, seven generations have succeeded one another in the village of Mareuil-sur-Aÿ, near Épernay, with the latest generation taking the helm of the house in 2019 under Mathieu Roland-Billecart. Florent Nys has been the house’s cellar master for nearly 10 years. The estate’s 100 hectares of vineyards are now certified organic, with 10 hectares cultivated biodynamically since 2025.
