To the south-east of Mont-de-Marsan, a 3* hostellerie with a bistronomic table, which works its magic under the watchful eye of regional traditions. Compositions are renewed here and there to keep up with the times, both in form and content, with a dressing and cooking methods in tune with the times, offering local produce in an interesting variation: ceviche of sea bream, lime, fresh coriander and heirloom tomato tartar, roasted sturgeon fillet, hazelnut crumble, stuffed piquillo, mini ratatouille with summer vegetables, pea coulis, spearmint and Espelette pepper, Pierre Matayron's black pork shoulder roasted in a casserole with caramelized porcini mushrooms and herbed potato duchesse. Classic desserts. Excellent service.
