Set in the heart of the Gers countryside, Thibault Lagoutte's Gascony barn is a true moment of terroir, with its traditional architecture and local cuisine, highlighting the products of local artisans. The €36 menu is in perfect harmony with the setting, under these beautiful, ageless beams, a pork-poultry-foie gras pâté croûte, floc jelly, a back of Adour sturgeon, small spelt risotto with vegetables, a "crapaudine" grilled pigeon, jus corsé and grenailles, a prune bavarois and armagnac ice cream.
