Remarkable Restaurant It's always a special experience to come to Atsushi Tanaka's table, to rediscover that ethereal atmosphere that so distinguishes it from others. This rawness, detectable at first glance against the bare concrete of the dining room, characterizes quite well the chef's approach, founded on an essentialist philosophy of the product, yet constrained by the imperative of impeccable aesthetics. Plates are first and foremost works of art before they are works of craftsmanship, just as Tadao Ando's houses are first and foremost visual curiosities before they are architectural feats. Successive seasons lead the chef to gradually revise his copy, renewing ideas without losing sight of the concept: plates with minimalist titles, whose appearance doesn't necessarily help describe them; but the objects d'étude are as pleasing as ever: leek with hazelnut butter, pea, veal and watercress tartlet with a superb consommé, the signature dish of spider crab with carrot and tonka bean, scallops with fermented white asparagus and almonds, abalone with green asparagus and wild garlic, Quercy lamb with turnip and yuzu-kosho, and the fantastic declination of lilac to finish. The cellar follows closely, with cutting-edge references from France and abroad.
