Remarkable Restaurant Just across from the Île Saint-Louis, Atsushi Tanaka's table is always a singular object, whether it's your first or tenth visit. An ultra-minimalist address with a strong, very personal identity, crystallizing the chef's personality between his Japanese origins and his French background (he worked for Gagnaire in Tokyo and then in Paris), it is conceived as a showcase free of any sensory disturbance, focusing the guest's full attention on his plate. The chef is as concerned with presentation as he is with taste, proposing compositions that can be looked at before being eaten, and succeeding in producing an aesthetic experience without ever lapsing into intellectualism. Once again this year, ideas are as pleasing as ever, adding to the signatures in his €190 menu, eggplant / prawn / mussel, yellowtail / boshi / rhubarb, spider crab / carrot / tonka, lobster / fig / ginger, red mullet / tomato / tagetes, Quercy lamb / turnip / yuzukoshō, or cherry and marjoram. Nice selection in the cellar.
