A stone's throw from the tourist hustle and bustle of Notre-Dame, on a street preserved from the 5ᵉ, Alliance plays fast and loose with fashion and the spotlight. A sober, elegant atmosphere, with no unnecessary frills. There's no fuss here, just an address where you come for what's essential: to discover chiseled cuisine and service without false notes. There are two ambiances to choose from: facing the kitchen, for a solo or duo show, or in the lounge opposite, ideal for happy tables and fine wines. At the helm is a chef who knows the score: Toshitaka Omiya, who has worked with Robuchon and Passard, doesn't mince his words. He goes straight to the essentials, with clean, clear, chiselled dishes. The poulet de Racan, contised with lobster coral, remains a classic of the house, but the lunch menu (from €95 in three sequences) allows for a more stealthy and always well-thought-out discovery. As a prelude, we offer inspired amuse-bouches, followed by a fresh horse mackerel, energized by a green vinaigrette and a touch of mint. This is followed by a trompe-l'œil Jerusalem artichoke with a crème brûlée treatment, topped with chips of the same tuber. Then comes the biche, accompanied by cranberries and onions, a dish that perhaps lacks a touch of audacity to be unforgettable. The desserts make their mark: brioche perdue with Mediterranean citrus, escorted by a delicate jasmine sorbet. As for the cellar, Shawn Joyeux has put together a three-act wine list, full of nuggets at just the right price. White or red, you'll enjoy smooth sailing, with surprising pairings that never tire. And let's not forget the quality of the service: professional, flexible and perfectly friendly. Prices expected for central Paris.
