The most famous restaurant in Paris, in France, and perhaps even in the world. It is undoubtedly an institution that must be approached with a certain solemnity and a great deal of respect. In this upstairs dining room facing Notre-Dame above the Seine, one naturally savors this unique and historic moment. The most dazzling wine cellar imaginable, with its old vintages from all the great châteaux, is an added highlight of the visit, and simply perusing its list is a delight. Our recommendation, of course, is to sample the traditional masterpieces brought back to life by MOF chef Yannick Franquès: the classic “foie gras of the three emperors,” Tour d’Argent caviar, Claudius Burdel’s wild game ragout, blue lobster with lovage sabayon and snow peas, and of course the duckling, served here as thin strips with arugula and artichoke. We finish on a light note with pineapple, having spent 480 € on this truly royal and very Tour d’Argent-style menu. Regulars choose other timeless specialties from the menu, such as André Terrain’s quenelles, Frédéric Delair’s duckling, and the Tournelles saddle of lamb. The service is impeccable, in keeping with the required air of solemnity.
